Lemon Meringue Martini

Back in the day, many classic cocktails used egg white to add opaqueness and creaminess. Pink Squirrel and Golden Fizz come to mind. But today, it's much less common to have a bartender shake up an egg into your drink. You don't taste any eggy flavor and it adds a nice frothiness to the drink without the clotting that adding cream or cream liqueurs can do.

This martini tastes just like a fresh slice of smooth lemon meringue pie. Tart and sweet at the same time and perfect for a hot summer day. (Let's pretend it's not the middle of January for a moment.) ;)
  • 2 oz Vanilla Vodka
  • 1 oz Absolut Citron Vodka
  • 2 oz Limoncello - Caravella adds a nice lemon color
  • Egg White
  • Lemon Juice
  • Lemon Slice
  • Sugar
Chill an up glass with crushed ice and water. Run a lemon slice around the glass and rim it with sugar. Shake the egg white until frothy before adding other ingredients with ice. Shake until it sweats. Strain into the glass. Garnish with a lemon slice.
